Rich Chocolate Cake
Can be used to make a cake or cupcakes.
1 1/3 cups (200g) self-raising flour
1/2 cup (50g) cocoa powder
125g butter, softened
1 teaspoon vanilla essence
1 1/4 cups (275g) caster sugar
2 eggs
2/3 cup (160ml) water
Preheat oven to moderate.
Grease tin (& line)/pan
Sift flour and ocoa into medium bowl, add remaining ingredients; beat on low speed with electric mixer until ingredients are combined. Increase speed to medium; beat about 3 minute or until mixture is smooth and changed to a lighter colour. Spread into prepared pan (s). Bake in moderate oven until cake is cooked. Stand cake in pan(s) about 5 mins; turn onto wire rak to cool.
