Birthday Memories:
My favourite birthday memory is of the cake my Mum would make each year. It was ENORMOUS! It would take us days to eat it all - which is probably why it is so memorable. My sister and I carry on this tradition and on our childrens' birthdays we make the same cake, from the same tin and decorate it just the way Mum did for us.

Rich Chocolate Cake

Can be used to make a cake or cupcakes.

1 1/3 cups (200g) self-raising flour
1/2 cup (50g) cocoa powder
125g butter, softened
1 teaspoon vanilla essence
1 1/4 cups (275g) caster sugar
2 eggs
2/3 cup (160ml) water

Preheat oven to moderate.
Grease tin (& line)/pan
Sift flour and ocoa into medium bowl, add remaining ingredients; beat on low speed with electric mixer until ingredients are combined. Increase speed to medium; beat about 3 minute or until mixture is smooth and changed to a lighter colour. Spread into prepared pan (s). Bake in moderate oven until cake is cooked. Stand cake in pan(s) about 5 mins; turn onto wire rak to cool.
